Healthy Chocolate Treat

Raw chocolates with goji berries & Chocolate dipped orange slices

 Ingredients:

  • 100g Raw cocoa butter
  • 4tbsp Raw cocoa powder
  • 2tbsp Agave Syrup
  • Vanilla bean extract
  • Goji berries
  • Oranges

1. Chop up the raw cacao butter into small pieces so it is easier to melt. Place in a bowl and gently melt over a pan of hot water. Keep the heat low so as to not overheat.

2. Once the raw cacao has melted, turn the heat off but keep the bowl over the pan of hot water. Mix in the vanilla bean extract and the raw cacao powder. Add approx 2tbs of agave syrup and mix well till the mixture is smooth.

3. Add goji berries to each mould and add the warm chocolate mixture. Alternatively, slice oranges and dip them into the chocolate. 

4. Leave to set in the fridge (for 1 – 2 hours) or in the freezer for half an hour. Leave the oranges for 15 minutes in the fridge.

I love the ceremony around Tea, taking time out in the day to relax with a cup of tea, the tea pot, the brewing, the dainty cup and saucer and of course a little treat to go with it.

Here is a spicy blend to try:

Follow steps 1 and 2, reheat, and strain, adding extra hot water as necessary. For a richer flavour and a pick-me-up, follow steps 3, 4, and 5 to add the milk (dairy or non), black tea, and sugar.

  1. Grind:
    1. 11⁄2 tsp coriander seeds
    2. 3 tbsp cardamom pods
  2. Bring to a boil, then let sit overnight:
    • 2 cups water
    • 1⁄3 cup ginger, finely chopped
    • 1⁄2 tsp black peppercorns
    • the ground cardamom and coriander
    • 1 cinnamon stick
    • 3 cloves
    • 1 dash allspice

3. Add 3 cups of milk (dairy/soya/rice)  and slowly bring to a low boil, stirring continuously

4. Add 2 or 3 tablespoons good-quality black tea (I use 3 parts Kenyan, 1 part earl grey) and simmer for 5 minutes.

5. Strain and sweeten to taste with 2 to 31⁄2 tbsp honey or sugar.



Get Sprouting

Sprouting is a great way to enjoy pulses, grains and seeds to make them easier to digest and make the nutrients and enzymes more available. Sprouts are raw, living, hydrated food. Any pulses, grains or seeds except oats and kidney beans can be sprouted in 3 easy steps:

  • Soak overnight
  • Drain and put in sprouter (or a ventilated container)
  • Water twice a day

They can be used as soon as they first start to sprout, or wait until the shoots are about an inch long.

Use them raw in salads, or add to stir fries and other cooked meals right at the end of the cooking process.

Super Greens Mix

A recipe found in Patrick Holfords - The Holford 9-Day Liver Detox.

A pesto style mix of green leaves and herbs, perfect addition to a vegetable and quinoa/rice/pasta dish. Also a fantastic way of increasing these vitamin C rich ingredients in one meal.

This mix can be changed by adding avocado (vitamin E and protein), or cucumber, garlic, olives, pepper, pine nuts for example.

Ingredients: – 1/4 bag of watercress, 1/4 bag of baby leaf spinach, handful of basil leaves, 1tbsp extra virgin olive oil or hemp oil or flax seed oil, squeeze of lemon juice.

Blend all the ingredients together then add the oil.

Surprisingly tasty.



A peek at dinner last night

 Superfood Salad

Serves 2

1 small sweet potato, skin left on and cubed, 1 small red onion roughly chopped, 1 red pepper chopped, 1 small courgette chopped, 2 garlic cloves thinly sliced, 200g cherry tomatoes, 1tsp marigold reduced salt vegetable boullion powder, 2 heaped tbsp pumpkin seeds, 2 portions of the super green mix posted earlier, drizzle of olive oil.

Preheat the oven to 200C. Place the chopped vegetables and garlic in a roasting tin, drizzle the oil, stir to coat them and cook for 40 minutes.

Add the whole cherry tomatoes and return to the oven for another 15 minutes, until the tomatoe skins split and the sweet potatoes are soft when pierced.

Meanwhile, place the quinoa and bouillon powder in a pan and cover with boiling water (2 parts water to 1 part quinoa). Bring to the boil and simmer for 12-15 minutes until the liquid is absorbed and the grains are fluffy. 

5 minutes before the vegetables are ready place the pumkin seeds on a baking tray and toast them in the oven.

Stir the roast vegetables and the Super Green Mix into the quinoa, sprinkle the pumkin seeds ontop, ready to eat.
